Welcome Shane Burke!

We’d like to welcome Shane to the Stumpy Gully team!

He’s taken up the Head Chef role and ready to bring his energetic style to the kitchen.  Here’s a little about the journey that lead him here…

Shane started his career at fifteen, 23 years ago in a traditional local wood fired bakery, working from 1am – 9am, and he loved it. It was this introduction to the world of work and cookery, alongside happy afternoons baking with his mother in there farmhouse kitchen, that shaped Shane’s approach to work, life, cooking and family. 
His passion for food took him, at eighteen, to the bright lights and opportunities of Melbourne. It wasn’t long before he was ensconced in some of the best kitchens in the city from the iconic Stokehouse and Circa, The Prince to the hip and ever popular Blue Tongue Wine Bar and Restaurant in Elwood.  His knowledge and skills grew exponentially as he worked alongside some of the best chefs and future talent of the industry but it wasn’t until he moved away from Melbourne and then further, away from Australia, that Shane truly began to understand his own style and what would become today’s ‘modern Australian’ cuisine.
Ten years travelling and working around Australasia, Asia and Europe has allowed Shane to immerse himself in the cultures that truly create the style, flavours and techniques of modern Australian cuisine. Influenced by both traditional French and Italian methods alongside cutting-edge Scandinavian and Spanish culinary skills and ingredients, fused with Asian influences Shane’s food is a true union of all that he loved about food; cooked with the utmost of heart. Having returned to Australia, with his young family, four years ago Shane has committed himself to getting to know the local producers from wine makers to market gardeners of the Mornington Peninsula. His passion for this beautiful and abundant part of the world grows daily.

In his own words- “I love using traditional cooking techniques, focusing on depth, flavour and texture. You eat with your eyes so presentation of the dishes is extremely important to me”
